Bulgur balls with peas and coriander

I like arancinis, falafels … I think I have a predisposition to love food when it is presented in the form of a ball! The only problem with these little balls is that it takes a little time to do them, so it often discourages me and I do very little. It’s a bit like with the gnocchi eventually.

But it’s not good !! We should not let discourage, especially when we know that in the end we will be able to feast.

I chose to make this balls of bulgur simply because I eat it very often in salad or in accompaniment and it was the occasion to prepare differently. The garnish consists of peas, chickpeas, coriander, curry and parmesan. I did it a little blindly and I am happy because the whole gives something I liked.

Preparation time: 45 min

Time of rest: 2 am

Cooking time: 30 min + 10 min

Ingredients:
– 130 g of bulgur
– 1 onion
– 1 dash of olive oil
– 40 cl of water
– 1 stock cube of vegetables
– 90 g of peas
– 100 g of chickpea
– 1 tsp of curry
– 30 g of Parmesan
– Leaves of coriander
– Salt, pepper

For the cooking of balls:
– Flour
– Olive oil

Begin by chiseling the onion finely. Heat the fillet of oil in a frying pan and once hot, sauté the chopped onion. When the onion is cooked, add bulgur and mix. Then add the water and cube, mix and place a lid. Let cook over low heat for about 25 to 30 min. Do not hesitate to come and mix from time to time. 10 min before the end of cooking, add the peas. At the end of cooking, bulgur should be slightly viscous.

Crush the chickpeas in order to have a mash. Add to bulgur as well as curry, chopped coriander and parmesan. Season with salt, pepper and mix. Allow the preparation to cool and store in the refrigerator for 2 hours.

When the preparation is cold, you can handle it. Take a little in your hands to form a ball. Make balls the size you want until you no longer have any preparation.

Before cooking, lightly flour the pellets. Pour a drizzle of olive oil in a frying pan and heat. Add the pellets and turn them lightly in the frying pan to cover them with oil. Cook for about 4 minutes, making sure to turn them also during cooking.

Serve hot. If you do not taste them right away, you can heat them in the oven for 10 minutes at 180 ° C.
