Norman, we can say that the UK is next door !! Yes, yes, small, it was easier to go have a tea in Canterbury than at Biarritz! Then I had the chance to go to the other side of the Channel many times since I was little. And, it’s always the same thing, when one goes abroad, even if they are our neighbors, the tradition is to brings things to eat.

These biscuits were often found in my suitcase! It’s true we also have it in France but it is a sweet from out there and it’s so good I could not resist.

Shortbread

Ingredients :
– Icing sugar 60g
– Butter 120g
– 160g flour
– Potato starch 30g

– caster sugar

Beat the butter to obtain an ointment. Add all other ingredients and mix until having a smooth paste.

Let stand 1 hour in refrigerator. After the elapsed time, place the dough between two sheets of parchment paper and spread to have a dough 1cm in height.

Using a cookie cutter or knife, cut out biscuits of the shape you want. Sprinkle with icing sugar before baking at 150 ° C 25min.
